Unlimited Plan required for new iPhone?

I want to purchase a new iPhone 6S, but it looks like I'm required to purchase the monthly unlimited plan.
I want to keep my number, but would prefer the Classic Service Plan. Can I switch my number AND switch to the Classic Service plan when I get the phone?
